Happy Birthday Bekki!

There are too many birthday's this month.  So maybe cupcakes next month!  Over the weekend was my friend Bekki's birthday.  She's an 80's freak so of course we had an 80's themed party.  And of course I made her a cake.

Yay for pacman! Half of it was chocolate and half was white cake.  I dyed the white cake purple, blue, and green but I didn't get a picture of it.  It's basically like my last post though.

Happy Birthday Sister!

I know, I know....I was supposed to get back to the cupcakes but this was a very special occasion!  It was my sister's 30th birthday.  Love you sister!  She's a fan of the rainbow, but come on...who isn't?  I saw this really cool idea on babble.com.  It's a rainbow cake in a jar! How neat!

This is what it was supposed to look like.


Isn't it beautiful!  Yeah! I thought so too!  So brilliant me decided to do this an hour before we left for Houston to see her.....


So I go to the store get what I need....food coloring, quart size canning jars, sprinkles....QUART SIZED CANNING JARS?!  I guess I just thought that was a jumbo spoon or something (it does look pretty big)...The recipe called for pint sized canning jars...no big deal! I'll just make 2 jars instead of 3!  So still being my brilliant self didn't think about cooking time....(also did it in the microwave instead of the oven because it said 2 minutes instead of 40! Woo!).....

WRONG...For some reason I couldn't get them to cook on the outsides....but the inside was done!  I said what the hell...took them to Houston and presented them the next day....this is how it all went down.


Yeah, it's pretty ugly.  It may be rainbow colors but it's no rainbow. 



Oh look! It's much prettier out of the jar!  She ate quite a bit, then got a phone call and let the cake sit.......


This started to appear....goo...this is after being microwaved for...oh I don't know 6 minutes?.....So we removed the icing and nuked it some more...Eventually everything was well again!


Take a look at this rainbow cake in a bowl! It really did turn out pretty and gooooood. 

I just know better than to wait until the last minute, and I won't be cutting any corners next time!

Look! I do still bake!

This is something my boss asked me if I could make. I had never tried it before so I thought I would! It's a chocolate chip cake. It was SO good. My boss approved.
Flan is something I've always wanted to try to make, which is weird because I've never actually eaten it before. I don't care for it. It was kind of boring...or it was exactly how it was supposed to be, I don't know because I've never had it! My darling husband called it egg jell-o. What a sweetie...
This is a pink lady cake. My mom asked me to make something for her friend's birthday so this is what I found. I heard it was good. I hope they really enjoyed it. It was a devil's food cake with pink frosting and lady fingers around the edge.

It's been so long since I made these that I don't remember what they are called. Let's call them, cream cheese awesome. They were pretty damn good. The "shell" is a tortilla, filling is cream cheese, and it was obviously topped with blueberries! You could put anything on top. Maybe I'll do chocolate next time. Mmm...

I feel like I'm getting away from what the actual blog is supposed to be. Cupcakes. I think I'll try to make some from the original book this week. Wish me luck.

We could use some internet.


I would probably...maybe....update more often if I didn't have to go to my parent's house every time I needed some internet! I'm also getting bad about not taking pictures of my goodies....

Since the AMAZING ice cream toffee pie, I've made some walnut clusters (which were grand), a caramel apple cheese cake (the family says I have to make it again), and ZOMBIES!


These were made for Steven for his birthday. They are green velvet with cream cheese icing. They were supposed to have arms reaching up at the last cupcake standing but all I could think of was pipe cleaners and they left fuzzies EVERYWHERE. It's all good....some zombies don't have arms...


Drawing the faces was the hardest part because if the liners, but Bruce Campbell's (or who ever you want it to be, Steven) face turned out awesome...

And of course zombies have to have guts when you slice them open! They were so good!

Home sweet home.

I know I've been neglecting the cupcakes but I've had a lot going on! We moved back to the good ol' town of Longview, America, and we are living in a camper. So it's hard to even get around to doing anything, especially baking. I have been cooking dinner for my parents. (It's a way of income or I wouldn't just do it every night) Love you mom! With dinner comes dessert! So I do have a few things I've been doing but still no cupcakes. When we get settled in a bit more I might be in the kitchen more.


These are apple pockets. They remind me of apple pies you get at McDonald's although I don't think I've ever had one. They were really good warmed up and with some ice cream!


These are chocolate biscuit puffs. And they were a bust, literally! The chocolate was supposed to stay inside of the biscuit but it obviously didn't. I'm not a big fan of bread so I really didn't care too much for these.

This beautiful creation is my lemon blueberry cheese cake. It was so light and fluffy. Yum! It was made with cottage cheese and only 171 calories a serving!


Tonight we will be feasting on the caramel toffee ice cream pie. I'm so excited! It's so pretty and super easy to make. It just has to freeze for 6 more hours...

Babies!

While I was at the lake for Memorial weekend my mom told me she was going to a baby shower the next weekend. She asked me if I'd like to make the cake. Sometimes I take on more than I should. I said yes.

Any baby shower cakes I've seen are made with fondant. I've played with fondant a total of...oh 1 time...So on Tuesday when we got back home from the lake I started playing with fondant again. I made an entire cake in one day.


This is what I came up with. Of course I took the picture from the best side. It had wrinkles and cracks. Some of the fondant wasn't covering the cake. The next day the bow fell flat and melted a bit. But that was due to it being hot in our apartment and not letting the fondant dry enough.

So my REAL cake adventure started on Friday.


I made the bow and flower.


Placed pearl sprinkles in the center of every flower. It was tedious but they look great.


And this is the finished product! I was very happy with myself. It still had some wrinkles but they were easily covered by the ribbons. It was a big hit. The mother to be loved it.


It was supposed to be a pink velvet cake, but it turned out a little more red than I wanted. Didn't matter though because it was still good! You can't really tell but there is also pink cream cheese icing between the layers.

And this is me with the cake! Yay!

Memorial Weekend


Memorial weekend is a time of the year that I really look forward to. It marks the beginning of Summer and it's our first camping trip of the year. It's always so much fun! And of course I have to make some goodies for the long weekend.


These are called frozen lemonade cupcakes. They were SO sweet....I could only take one bite. I didn't realize they needed to be frozen at all times. A few of them melted.

These "cupcakes" are called dessert rose. They were kind of like puppy chow. Also very sweet. SO much chocolate. I couldn't eat a whole one of these either.


It was a really great weekend with friends and family. Can't wait until next year!

So you had a bad day...


So, my A game was not brought today. I don't know why I was having such a hard time. I made some rocky road cupcakes for my grandma's birthday this weekend and lots of things were going wrong. I kept spilling the mix, I forgot to spray the liners, and I put too much batter in each cup along with not enough topping. I knew that I had put dark chocolate in them but when I taste tested I didn't realize how bitter it was going to be..so at first I really didn't like it. Plus, I got one without marshmallows. Sad day.


Oh, and they are kind of ugly. Hopefully my family believes in the saying "It's what's on the inside that counts." Haha.


I also made some more pecan pie muffins. Mmmmm.

Muffin tops for everyone!

The husband and I are in a tight budget because he REALLY wants a motorcycle. So for this week I made prepackaged muffins.


My mother bought me this and put it in my Easter basket. Yes, I'm 24 and I still get an Easter basket. No, it's not just filled with eggs and candy. It comes with muffin mix and cookbooks too! It might seem silly to others but I'd be sad if she stopped. Love you mom!

So, I'm not really a big fan of pecan pie and neither is the husband. But I do love me some muffins! These were delicious! And so dang easy.


Aren't they pretty! Hey look mom! I even used the new kitchen towels you put in my basket! The package said to make 24 mini muffins but I wanted bigger ones! So I made 12 regular ones! I've already had 3. The husband might not even get to try them.

Guten Tag!

I have not been sticking to my cupcake cookbook but that does not mean I haven't been baking! I asked my mother what my step dad might want for his birthday (baking related) and all she said was something low fat because they are trying to lose some weight. Well thanks mom that wasn't really helpful! UNTIL! I remembered that his favorite cake was German chocolate so I went on a search for a fairly easy low fat German chocolate cake recipe. I found one! Woohoo! So I woke up around 5 a.m. last Friday and got to it. The entire cake was made from scratch (usually I cheat and buy the pecan frosting). I even toasted the pecans and coconut! Take a look!

Yeah, it's a dark picture. Photography is not my thing. That's why I bake! So I'm not really a big fan of this particular cake.....well I'm just not a fan of coconut so I tend to avoid anything with it. I thought this recipe was pretty awesome even though I really didn't have anything to compare it to. My parents really enjoyed it and I even got the husband to take a bite!

And this was all that was left from the weekend. I'd say it was a success.

Happy birthday to the husband!


Yeah, I know, his birthday was last week. I'm always a week behind when it comes to posting. My darling husband said he wanted the chocolate peanut butter cupcakes so that is what I made him. They had more peanut butter than chocolate but it all worked out.


They were just so cute with the peanut butter chips poking out like that! But I had to cover then with frosting. The frosting was so creamy and amazing. I'd rather have just eaten that.

Hello! It's been a while!

It's been a month! I had to take a break because our human garbage disposal moved out, I'm trying to get into shape, and my husband doesn't eat as much as he should! But I'm back on track!

I love pie. Almost every kind. Banana cream, apple, key lime, AND lemon meringue. Which brings me to my latest cupcake. Lemon meringue pie cupcake.


I think they turned out great! And they taste awesome too.

Next week is the husband's birthday so I will most likely have something rich and chocolately to show you!

Happy birthday to me!


Made some cupcakes. They were green. They had alcohol in them. Happy birthday to me.

They are called mint julep. It's a drink with bourbon and mint...probably some other stuff too, I've never had one. These were pretty dense but still yummy. Very minty. I had fresh mint in the batter and put mint liqueur in the icing. They did not look a thing like the picture but that doesn't really matter. I liked them. And they were a prefect treat for my birthday. By the way my birthday was St. Patrick's Day. =)

Busy Weekend!

Hello all! I've had such a busy weekend followed with a bit of a cold so I am just now able to post the cupcakes I made on Friday! The husband and I went four wheeling with the family for my second mother's birthday. I made her margarita cupcakes! And then of course for the young ones and those who did not wish to have alcohol in their system I made peanut butter and jelly cupcakes! I enjoyed the hell out of both of them but if I had to choose I think I'd pick the pb and j. I didn't really have time to take many pictures, but I think you'll get the idea.





These cupcakes did what everyone wants their cupcakes to do. They made beautiful mounds!.....mounds don't do so well when you are using a glaze on them. Ugh. But of course they were still delicious (because they had tequila in them..) Yum.









Mmmm....Doesn't that look like heaven? Don't you just want to put that on some bread? I just LOVE peanut butter and jelly. Who would have thought to put it into a cupcake!

So after tasting these I realized either I over mixed the batter or I didn't have enough jelly. I also think they look much nicer without the peanuts on top, or maybe if I had crushed them first they would have looked better. Regardless, they tasted amazing.




















I probably won't be making any cupcakes this week because I'm still feeling a little under the weather. It is only Wednesday so we'll just have to see!

It feels like it's been a while since I've been on here. It feels like it's been a while since I've baked! I FINALLY got to the Valentine's cupcakes I had been meaning to make all weekend. Got a little busy with the parents coming to visit and the whole job search thing.


I thought these were just beautiful. They were the perfect size and they smelled amazing. I kind of didn't want to do anything to them! But I had to...or else it wouldn't have been the Valentine's cupcakes!

Voila! Beautiful. And they taste good too! Here are a few more pictures.


The inside had another cherry and a cherry cream cheese filling. Of course I had to pick the one with these least amount of filling, but you get the idea. Also, it wasn't until I was frosting the last few cupcakes that I noticed I made the same cupcakes that were on my apron. I felt like a dork. P.S. I sprayed Pam on the liners and they came off beautifully.
