Home sweet home.

I know I've been neglecting the cupcakes but I've had a lot going on! We moved back to the good ol' town of Longview, America, and we are living in a camper. So it's hard to even get around to doing anything, especially baking. I have been cooking dinner for my parents. (It's a way of income or I wouldn't just do it every night) Love you mom! With dinner comes dessert! So I do have a few things I've been doing but still no cupcakes. When we get settled in a bit more I might be in the kitchen more.


These are apple pockets. They remind me of apple pies you get at McDonald's although I don't think I've ever had one. They were really good warmed up and with some ice cream!


These are chocolate biscuit puffs. And they were a bust, literally! The chocolate was supposed to stay inside of the biscuit but it obviously didn't. I'm not a big fan of bread so I really didn't care too much for these.

This beautiful creation is my lemon blueberry cheese cake. It was so light and fluffy. Yum! It was made with cottage cheese and only 171 calories a serving!


Tonight we will be feasting on the caramel toffee ice cream pie. I'm so excited! It's so pretty and super easy to make. It just has to freeze for 6 more hours...

Babies!

While I was at the lake for Memorial weekend my mom told me she was going to a baby shower the next weekend. She asked me if I'd like to make the cake. Sometimes I take on more than I should. I said yes.

Any baby shower cakes I've seen are made with fondant. I've played with fondant a total of...oh 1 time...So on Tuesday when we got back home from the lake I started playing with fondant again. I made an entire cake in one day.


This is what I came up with. Of course I took the picture from the best side. It had wrinkles and cracks. Some of the fondant wasn't covering the cake. The next day the bow fell flat and melted a bit. But that was due to it being hot in our apartment and not letting the fondant dry enough.

So my REAL cake adventure started on Friday.


I made the bow and flower.


Placed pearl sprinkles in the center of every flower. It was tedious but they look great.


And this is the finished product! I was very happy with myself. It still had some wrinkles but they were easily covered by the ribbons. It was a big hit. The mother to be loved it.


It was supposed to be a pink velvet cake, but it turned out a little more red than I wanted. Didn't matter though because it was still good! You can't really tell but there is also pink cream cheese icing between the layers.

And this is me with the cake! Yay!

Memorial Weekend


Memorial weekend is a time of the year that I really look forward to. It marks the beginning of Summer and it's our first camping trip of the year. It's always so much fun! And of course I have to make some goodies for the long weekend.


These are called frozen lemonade cupcakes. They were SO sweet....I could only take one bite. I didn't realize they needed to be frozen at all times. A few of them melted.

These "cupcakes" are called dessert rose. They were kind of like puppy chow. Also very sweet. SO much chocolate. I couldn't eat a whole one of these either.


It was a really great weekend with friends and family. Can't wait until next year!
